Cold Pasta Salads are perfect for a summer time lunch. They’re filling, not very heavy and most importantly, cold! You can add all kinds of vegetables to this versatile salad from fresh cherry tomatoes to grilled aubergine. Here’s how I make mine.

Ingredients
- 1-2 cups of Fusilli Pasta
- Pinch of salt
- Olive oil
- Red or Green Olives
- Cherry tomatoes
- Fresh basil leaves
Instructions
- Bring a large pan of salted water to the boil. Add the pasta and cook according to the packet’s guidelines.
- Drain the pasta and rinse well with cold water for a minute or so and drain again.
- Throw in some olive oil (this will stop the pasta from sticking) throw in the olives, basil leaves, fresh chopped cherry tomatoes, and anything else you like!
