Eggs Florentine

Eggs Florentine are a great breakfast meal if you have the time. They are also very easy to make, a wonderful treat for mums on Mother’s Day or any other day for that matter (Hint Hint!).

Cook time: 5 mins
Total time: 7 mins
Serves: 2
  • 4 large eggs
  • 4 tablespoons white wine vingegar
  • Hollandaise Sauce
  • 2 muffins
  • Handful of spinach.
  1. Bring a large pan of water to the boil and pour in the vinegar.
  2. Crack the eggs into a cup.
  3. Rapidly whizz the water clockwise to create a mini whirlpool inside the pan.
  4. Pour the egg and cook for 2 minutes.
  5. Slice the muffin and toast until a light brown.
  6. Layer with the hollandaise sauce, spinach or ham and place the cooked egg on top.
  7. Pour over the rest of the sauce and serve immediately.
