Veggie Sausages are a healthy alternative to meat sausages, packed full of natural ingredients they taste incredible with a honey glaze and actually look like their meat alternative. In fact, by giving them a honey glaze, I guarantee you’ll trick your carnivorous friends into thinking they’re meat sausages! You can make the sausages from scratch, but if you’re short on time, pre-made veggie sausages will work fine too.

Ingredients
- 1 tablespoon fresh Thyme
- 1 tablespoon dry Basil
- 1 tablespooon dry Sage
- 1/2 teaspoon ground chilli
- 3 cloves garlic
- 1 portobello mushroom
- 1 cup grated, extra mature cheddar cheese
- 1 large onion
- 1 1/4 cups breadcrumbs
- 2 eggs
- salt
- pepper
- vegetable oil
- 2 tablespoon honey
- 2 tablespoon soy sauce
Instructions
- For the Sausages:
- Preheat the oven to 300 F.
- Chop the mushroom to a fine consistency and grate the onion, mince the garlic and combine with the thyme, basil, sage and chilli.
- Season well and add the cheese and breadcrumbs.
- Crack in 1 whole egg and the yoke of the second. Combine until the mixture becomes a firm putty.
- Mould handfulls of the mixture into sausage shapes and place in a casserole dish.
- For the Glaze:
- In a bowl, combine the honey and soy and drizzle over the sausages.
- Place in the oven for 15-20 minutes, turning occasionally and drizzling over the remaning honey mixture to create a really sticky glaze.
