Roasted New Potatoes with Garlic and Rosemary


We’ve been growing red potatoes on our roof all Summer and Autumn long. If you’re lucky enough to get your hands on some fresh new potatoes too, this is the perfect way to cook them!

 

As ours are quite muddy [for obvious reason] we like to give them a really good scrubbing first.

how cute is Mr. Stone? Awww. Here he’s peeling and chopping up some garlic. About two cloves.

Poke a few holes in each potato with a fork. Place on a baking tray.

Add some fresh rosemary. Strip the stalk away and just leave the spiky shoots.

Drizzle with olive oil and sea salt. [We added a few other random veg picked from our roof to roast at the same time, so ignore the peppers and toms in this photo. They aren't part of the dish!]

These were on the smaller side so we left them whole to roast but euqally larger potatoes benefit roast well sliced in half as we’ve done in the intro photo. Both ways taste delicious! Stick in the oven on a medium 180F-ish heat for about 20 minutes. Yum!
